Our apple trees were ready for their first little harvest, so we zipped up in our matching green hoodies, I strapped her in her carrier, and together we walked outside and picked a basket of apples. Salted Caramel, Chocolate and Peanut Cracker Stack Bars
These fantastic potluck bars come from Patrice Hurd of Bemidji, Minnesota, who won the grand prize in our Best of the Midwest recipe contest.
Patrice says they're a twist on her grandmother's cracker bars. The bars cut beautifully and are loaded with salty-sweet-nutty-chocolately flavor. Line a 13x9x2-inch baking pan with nonstick foil, extending foil over the edges of the pan. Arrange half of the crackers in a single layer over the bottom of the prepared pan. In a medium saucepan combine butter, honey, brown sugar, and cream. Bring to boiling, stirring constantly.
Add graham cracker crumbs, reduce heat to a simmer and continue to cook mixture for 5 minutes, stirring constantly. Pour half of the caramel mixture over the crackers in the prepared pan, spreading to cover.
Sprinkle with chopped peanut butter cups and peanuts. Pour remaining caramel over. Arrange remaining crackers in a single layer over the caramel, pushing slightly to secure. For topping, in a medium microwave-safe bowl, combine chocolate and butterscotch pieces. Microwave for 2 to 3 minutes or until melted, stirring every 30 seconds.
Stir in peanut butter until smooth. Chill bars for 2 hours or until completely firm. Using the edges of the foil, lift the uncut bars out of the pan. Cut into 32 or 40 squares. What do you get when you mix peanut butter, Rice Krispies, and chocolate together? Well, you almost get these Peanut Butter Crispy Bars. There are a couple other ingredients that you need to make them sweet and a little bit gooey. There are only six ingredients total, and two of them are chocolate chips and butterscotch chips. Straight chocolate never got any complaints.

Then we peeled them, chopped them into pieces, and simmered them with a little cinnamon as we sang that we like to Oat Oat Oat Opples and Banonos. Once they got very soft, I pureed them with a stick blender and then poured them into her cute baby blocks. Then we fed the apple cores to the chickens! We also made squash puree! Peeling a butternut squash with a five-month-old takes half a day but we did it and steamed some for Bernie food to stick in the freezer and used the rest for grownup supper.
